1. Wash the duck and cut it into medium portion-sized pieces. Season with salt and pepper on all sides and rub with spices to taste. Dried basil and dill are excellent choices for seasoning. It's best to sear the duck beforehand to make the meat juicier. Pour a little oil into a frying pan (you can also use homemade fat) and place the pieces in the pan. Sear over high heat until a golden crust forms.

2. To prepare the stew, it's better to use a deep, heavy dish—such as a roaster, for example. Place chopped onions and carrots in small cubes on the bottom. Add a little pepper and salt to taste, as well as a bay leaf.

3. Place the seared duck pieces on the vegetable bed.

4. Peel the potatoes, wash and cut into small cubes. If desired, you can boil them beforehand for about 10 minutes (this simple recipe for duck casserole in the oven uses raw potatoes). Place in a casserole dish and pour in the broth. If broth is not available, you can use water, but be sure to season it with salt to taste.

5. Add spices, dried herbs, and tomato or sour cream sauce to taste. Cover the dish with a lid and place it in the oven. Bake for about 40 minutes at medium temperature, then reduce the heat and simmer until fully cooked.
