
Duck Stew
Description
Here is a simple recipe for duck stew. We will cook it in two stages: first on the stove, then in the oven. First, a few words about cookware. For stews and various dishes that you plan to braise, it is best to use a cast-iron cauldron. In such a pot, all ingredients cook thoroughly and the dish turns out exceptionally delicious. Divide the duck into 7-8 portion pieces.

Rinse the duck and place it in a pot, cover with cold water, and set over heat. As soon as the broth comes to a boil, skim off the foam, then cover with a lid and let it simmer over low heat for about 15–20 minutes. When the duck meat becomes tender, add cubed potatoes to the broth.

Cut the onion and garlic into medium slices. Cut the carrots into half-rings.

Sauté the onion, garlic, and carrots in vegetable oil.

Now add the sautéed mixture to the other ingredients. Pour in 2 tablespoons of tomato brine, season with salt and pepper, and add a bay leaf. As soon as the broth comes to a boil, add finely chopped fresh herbs.

Proceed to the second stage. Remove the pot from the heat and place it into the preheated oven for 40 minutes at 190 degrees.
