
Pork stew with potatoes
Description
The recipe won't take much time. You can use any cut of pork (bone trimmings, stew meat, rear part, etc.). To make the dish more filling, I also add carrots, mushrooms, and herbs. The stew is prepared with a generous amount of sauce. Serve it hot.

Cut the pork into small pieces, then transfer to a bowl and add flour, mix well.

Heat a skillet with olive oil and sear the pork until golden brown, then transfer to a plate.

Slice the onion, potato, tomatoes, and carrot into small pieces. Cut the mushrooms in half. Finely chop the garlic and parsley.

In a heavy-bottomed pot, pour a little olive oil and add the onion. Sauté for a few minutes, then pour in the wine and mix everything together.

Add potatoes, carrots, and tomatoes to the pot, pour in the chicken broth, add spices and salt. Bring to a boil, then reduce the heat and cook for 5-7 minutes.

Add the pork, cover with a lid, and cook over low heat for 30–40 minutes. Add the mushrooms 10 minutes before the end of cooking, and season to taste.

At the very end, add chopped herbs, turn off the heat, cover with a lid, and let it steep for 10-15 minutes. Serve the dish hot.
