Prepare the meat. Cut the piece on three sides to make an even flat piece. Pound it with a mallet so that the meat is of uniform thickness.

Chop the apples finely, add dried cranberries, sugar, and mix. Our filling should release juice.

Then transfer the filling to a deep saucepan, add cider, vinegar, ginger, mustard, and spices. Bring to a boil and simmer for 5–7 minutes.

Transfer the apples and berries to the blender bowl and blend into a puree. Return the syrup to the heat and reduce it by half.

Season the meat with salt, sprinkle with pepper, and top with an even layer of the apple-berry filling.

Carefully roll the meat into a roulade using the film. Now tie it neatly with a string so the roulade keeps its shape and the filling stays inside. Brush the entire surface with syrup.

Wrap the roll in foil in several layers. Place in a preheated oven at 200 degrees for 1 hour.
