
Beef stew with broccoli and tofu
Description
This recipe won't take much time. Arrange the tofu in a single layer on a baking sheet. Cover with a paper towel, press with a weight, and let stand for about 20 minutes. Meanwhile, in a large pot of boiling salted water, cook broccoli until bright green, about 2 minutes. Drain and set aside. Heat oil in a large skillet over medium heat. Add tofu and cook until golden brown, carefully flipping halfway through, for 10 to 15 minutes. Transfer tofu to paper towels. Meanwhile, prepare the sauce. In a small bowl, whisk together soy sauce, vinegar, red pepper, garlic, cornstarch, and 3/4 cup water; set aside. Add broccoli to the skillet and cook over high heat, stirring frequently, until tender, 2 to 3 minutes. Add the prepared sauce, stirring, and pour into the pot. Add tofu and stir for 1 minute. Sprinkle with cashews and serve hot.
