Lamb stew with potatoes

Description

This simple lamb stew recipe with potatoes is one of those dishes you prepare for a large gathering, so I make this stew whenever our whole cheerful family gets together. Since it includes potatoes, plenty of vegetables, and fairly fatty lamb, the dish turns out very hearty and definitely requires helpers to finish it off. However, you can also prepare lamb stew with potatoes at home for a small family—just reduce the quantity of all ingredients by two or three times.

    First, pour vegetable oil into a cauldron or a heavy-bottomed pot, heat it, then add lamb cut into small cubes (2-3 cm wide), and fry the meat until a golden crust forms.

    While the meat is frying, peel the carrots and slice them into rounds, cut the onion into half-rings, the pepper into strips, and the tomatoes into wedges. Once the meat is browned, add the onion to the pot, fry for 3-4 minutes, then add the tomatoes and pepper, and continue frying for another 5-6 minutes.

    Then we place the tomato wedges into the cauldron.

    Pour boiling water over all the ingredients, making sure the liquid completely covers the meat and vegetables. Season with spices, cover the pot with a lid, and simmer the meat with vegetables over low heat for 40–45 minutes.

    When the time is up, we add the peeled and coarsely chopped potatoes to the cauldron.

    If the liquid does not completely cover the potatoes, add a little more boiling water, then season the dish with salt to taste and simmer for another 40 minutes, covering the pot with a lid.

    At the very end of cooking, add chopped fresh herbs and washed prunes to the cauldron. Mix everything, turn off the heat, and let the stew sit covered for another 5-10 minutes.
