
Fried squash with mushrooms
Description
The dish is best served with garlic bread.

1. Cut the squash in half. Slice the mushrooms. Coarsely chop the parsley and basil. Mince the garlic. Preheat the oven to 200 degrees. Brush the two squash halves with 1 tablespoon of olive oil, sprinkle with salt and pepper, and place them on a baking sheet, cut side up. Bake in the oven for 30 minutes, then turn the squash over and bake for another 30 minutes, or until tender.

2. Meanwhile, heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add the mushrooms and cook, stirring occasionally, until browned, 5-6 minutes.

3. Add a pinch of red pepper flakes and garlic, cook for about 1 minute.

4. Turn off the heat, add raisins to the pot, and cover with a lid.

5. When the squash is ready, let it cool for 5 minutes. Use a fork to scrape out the flesh and transfer it to the pot with the mushrooms.

6. Add Parmesan, parsley, basil, and the remaining tablespoon of olive oil. Mix well. Season with salt and pepper and serve.
