
Fried rice with ginger

1. Heat 1 tablespoon of oil in a large non-stick skillet over medium heat. Add minced garlic and finely chopped ginger. Cook, stirring frequently, until fragrant, about 1 minute.

2. Cut leek into 8 mm thick pieces. Add leek and a pinch of salt to the pan. Cook, stirring frequently, until the leek becomes soft, about 10 minutes. Add another tablespoon of butter and the rice. Cook, stirring, until the rice is evenly heated, about 3–4 minutes.

3. While the rice is cooking, heat 1 teaspoon of oil in a medium nonstick skillet over medium heat. Crack the eggs into separate small bowls. Add the eggs to the skillet, season with salt, cover with a lid, and cook until the whites are set and the yolks remain soft, 6 to 8 minutes. Divide the rice among serving plates. Top with the fried eggs and drizzle with soy sauce and sesame oil. Sprinkle with chopped green onions and serve immediately.
