
Fried potatoes with corn and egg
Description
The recipe won't take much time. Pan-fried potatoes with caramelized onions, crispy bacon, and corn kernels won't require much of your time, yet you'll get an incredibly hearty and delicious meal. If desired, you can add a piece of butter and extra bacon slices at the end of cooking to enrich the flavor. You can also garnish the dish with chopped fried green chili. Serve hot.

1. Cut the bacon into slices. Dice the potatoes. Finely chop the onion and parsley. Remove the kernels from the corn cobs. Heat a large non-stick skillet over medium heat. Add the bacon and cook until browned and crispy.

2. While the bacon is cooking, place the chopped potatoes in a medium bowl, add a couple of teaspoons of bacon fat, and mix. Cover the bowl and microwave for about 3 minutes, stirring halfway through. Add the onions and potatoes to the skillet with the bacon. Cook, stirring, until browned, about 8 minutes. Add the corn kernels and most of the parsley, and stir.

3. Reduce heat to medium-low. Use a spoon to make 4 indentations in the mixture and crack one egg into each. Season with salt and pepper. Cover the skillet with a lid and cook until the egg whites are set, about 8 minutes. Garnish the dish with the remaining parsley and serve immediately.
