
Fried bacon with potatoes and asparagus
Description
This hearty side dish goes well with scrambled eggs or fried salmon.

Step 1

1. Cut the bacon into 4 mm cubes. Cut the potatoes into 1 cm cubes. Cut the asparagus into 2.5 cm pieces. Finely chop the onion. Heat the oil in a cast-iron skillet over medium heat. Cook the bacon, stirring frequently, until browned on all sides, about 10 minutes. Using a slotted spoon, transfer the bacon to paper towels to drain the fat.

2. Add the potatoes and cook for a couple of minutes. Season the potatoes with salt and pepper, then flip them to the other side and cook for a few more minutes, until the cubes are evenly browned. When the potatoes have been cooking for about 15 minutes, add the onion. Fry for another 5 minutes. Add the asparagus, cover the pan with a lid, and cook for 5 to 8 minutes. Asparagus usually takes only 5 minutes to cook, but thicker spears will require more time.

3. Remove the lid, add the fried bacon to the pan and cook for another 1 minute to reheat the bacon. Add seasonings to taste, if necessary. Serve immediately with scrambled eggs, goat cheese, and green onions.
