Fried sweet potato with spinach

Description

Heat oil in a large skillet over medium heat. Add sweet potatoes and cook, stirring, until they begin to soften, 8 to 10 minutes. Add curry powder and cook for 1 minute. Stir in 1/2 cup water and onions. Cook, stirring, until the water evaporates and the potatoes become tender and browned, about 10 minutes. Transfer the mixture to a bowl. In the same skillet, sauté spinach in two batches, adding the second batch after 2 minutes. Add the cooked spinach to the sweet potato mixture. Mix with vinegar and season with salt and pepper.
