Fried Parasol Mushrooms

Description

Fried parasol mushrooms — a most delicious dish that tastes like chicken fillet. I fry the caps after cutting them, dipping them in egg and flour first. You end up with a kind of mushroom "cutlet." Hearty, tasty, and beautiful! It makes an amazing appetizer. I first tried this snack at an acquaintance's woodland cabin. It was strange that she doesn't boil the mushrooms (for one thing), and also that the mushroom tastes so much like chicken (for another). Just in case, we had a shot of good moonshine with the snack :) So, serve with greens and sauce.
