
Fried pastries with egg and onion
Description
The baking is simple and quick. It's better, of course, to prepare the dough for buns using yeast. You can use either dry or regular compressed yeast. There is another way to make dough without using yeast—then you need to use a live starter, which takes a week to prepare. But then no yeast is required at all. If you don't have time, use dry yeast.

Pour into a bowl one full teaspoon of salt, 3 tablespoons of sugar, and dry yeast. Mix with milk. Add two large eggs and pour in a couple of tablespoons of vegetable oil. Mix everything well. Sift the flour and add more than half of it to the liquid mixture. Begin kneading the dough. Gradually add the remaining flour as needed. Place the dough in a warm spot, covered with a towel, and let it rise for an hour and a half.

Meanwhile, let's prepare the filling. First, boil the eggs hard. Cook the eggs longer to ensure they are completely firm. Add a couple of pinches of salt to the water while boiling. Rinse the boiled eggs with cold water to make them easier to peel. Finely chop the eggs or grate them on a coarse grater. Then wash the green onions, chop them, and add to the eggs. Season with salt and pepper to taste.

When the dough has doubled in size, we start shaping the buns. Divide the dough into small pieces. Form buns from the dough pieces by flattening the small balls with your fingers. It's better not to use a rolling pin, so the dough stays soft. Place the filling onto a round piece of dough so that it doesn't fall off. Seal the edges by pinching them together so that the buns don't come apart.

Take out a frying pan. Use the largest and deepest one so you can fit more buns. Heat it up and pour in some vegetable oil. Place the buns into the hot pan with the sealed side facing down. The oil should reach halfway up the buns.

During frying, you can cover the buns with a lid. This way, you can lower the heat, and the buns will rise better. Fry them on both sides until fully cooked. Wonderful taste, just like in childhood! Enjoy your meal!
