
Fried kefir dough pies with potato and mushrooms
Description
If you have leftover mashed potatoes from dinner, you can use them as a filling for pirozhki. With mushrooms they’ll be much more aromatic. You can use button mushrooms or boiled forest mushrooms.

To make pirozhki, prepare all the ingredients you need. Sift the flour through a sieve ahead of time to saturate it with oxygen.

Finely chop the onion for the filling and fry until golden. Then add the mushrooms. Stir and fry the mushrooms with the onion for 3–5 minutes. Season to taste with a little salt and spices.

Then mix in the mashed potatoes and heat everything through well. Then remove the finished filling from the heat and leave it to cool.

To make the dough, mix kefir with an egg. Add salt and sugar.

Then pour in the vegetable oil and add the baking soda.

Gradually add the sifted flour and knead a soft, pliable dough.

Divide the prepared dough into pieces. Shape each piece into a flat round, place the filling on it, and seal into a pastry.

Fry the hand pies in vegetable oil over low heat on both sides. They will turn golden.

Place the finished pies in a bowl and cover them with a towel. They will steam through and finish proofing.
