Fried pies with kefir

Description

Perfect with tea and coffee. Delicious pastries can sometimes be a difficult undertaking, but when you have a proven recipe at hand, everything becomes much simpler. For the filling you can use any vegetable, for example, potatoes or cabbage; fried or raw ground meat also works, as do boiled eggs with green onions. The filling can always be changed, but when it comes to the dough, stick to the recipe so that the dough really turns out "like fluff". Serve cooled or slightly warm.

    Prepare the ingredients for making fried kefir pastries “like fluff.”

    Pour the room‑temperature kefir into a bowl, add baking soda, a little salt (0.5 tsp), and mix the base for a fluffy dough.

    Add butter (2 tbsp) - the dough will be softer.

    Sift the flour into a bowl.

    Mix and knead the dough. Shape it into an even ball and let it rest under a towel or plastic wrap. After 15–20 minutes, the dough will become even more airy and soft.

    While the dough rests, prepare the filling – we have cabbage, but any will do. Slice the cabbage into strips.

    Peel the onion and carrot, they will be needed for the filling. Grate the carrot, and dice the onion.

    Heat a little oil in a pan (about 30 g), add the onion and carrot, and sauté the vegetables for 5–7 minutes, stirring occasionally.

    Add the cabbage to the sautéed vegetables.

    Fry the cabbage with vegetables for 10 minutes over medium heat. Mix the filling, add spices to taste. Salt and pepper will be perfect. Remove from heat and let it cool completely.

    Divide the dough into 6–7 balls – these will be the pastries.

    Roll each ball out with a rolling pin, but not too thin, about 0.5–0.6 cm thick. Place a portion of the filling in the center.

    Pinch the edges of the pies and place the items on a skillet where the oil is already well heated – set the heat slightly higher than low. Fry on one side until a brown crust forms – about 4–5 minutes. It is important to fry well over low heat so that the dough inside cooks through and does not remain raw. The pies will also rise well and become fluffy and soft.

    Flip and fry the other side for about 3–4 minutes, a little less, as the pan has already become hotter. Thus fry all the pies.
