Delicious baked goods for the whole family. Fried pirozhki are as much a flagship of Russian national cuisine as shchi, pelmeni, or okroshka. So if there is one thing every self-respecting Russian ought to know how to do, it is fry pirozhki—after all, this is our national dish. What is more, fried pirozhki are quite easy to make: you only need to set aside a little time, arm yourself with a recipe, and put in not too much effort. A simple fried pirozhki recipe lets you make them with absolutely any filling—sweet or savory. Good luck with your cooking. They can be served with tea or coffee.

    In a medium bowl, beat together 1 cup warm milk, 1/4 teaspoon salt, sugar, yeast, and 2 cups flour. Cover with a towel and place in a warm spot for 10–15 minutes.

    Meanwhile, in a separate bowl, mix 1 cup warm milk, sour cream, vegetable oil, eggs, and salt. Add two more cups of flour and whisk. Then combine this mixture with the yeast mixture.

    Gradually adding the remaining flour to the mixture, knead the dough.

    Cover the well-kneaded dough with a towel and leave it in a warm place for 1 hour. During this time, the dough should double in volume.

    The dough is ready, and you can proceed directly to making the fried pies. The dough turns out sticky, so it's best to work with it after greasing your palms with vegetable oil. Tear off a small piece of dough, shape it into a flat round, and place a little of your favorite filling in the center—in my case, potato with fried mushrooms.

    Shape the pastry and pinch the edges firmly to seal.

    Place the pastry on a floured work surface, seam side down. Meanwhile, shape the remaining pastries from the rest of the dough.

    Heat vegetable oil in a skillet. Place the pastries seam-side down into the hot oil. Fry until golden brown on all sides. Transfer the cooked pastries to paper towels to absorb excess fat.
