Grilled Artichokes

Description

Perfect for the table and with drinks. Artichokes are not only delicious but also healthy. Artichokes contain plant proteins and carbohydrates, vitamins A, E, C, and K, B vitamins, minerals (potassium, sodium, phosphorus, magnesium, calcium), and trace elements (iron, manganese, copper, zinc, selenium). Artichokes are low in calories (only 50 kcal per 100 g), so they are a real find for those watching their weight. Artichoke dishes are beneficial for people with increased stomach acid levels.

    1. Preheat a two-zone fire, with one side of the grill hotter than the other. Peel the garlic cloves and crush them. Cut the lemon into 4 pieces. Tear off four 30 cm pieces of aluminum foil. Place two garlic cloves in the center of each foil square.

    2. Trim the artichoke stem and cut away the outer tough leaves. Cut the artichoke in half and scoop out the fleshy pink choke. Repeat with the remaining artichokes. Place one artichoke on a square of foil, season with salt and pepper, squeeze the juice from one lemon quarter over the top, and drizzle with 1½ teaspoons olive oil. Wrap the artichoke in foil. Repeat with the remaining three artichokes.

    3. Place the artichokes in foil on the cooler side of the grill and cook, turning occasionally, for 25–30 minutes, until the centers of the artichokes are tender. Remove the artichokes from the foil and place them cut-side down on the hottest part of the grill. Grill for about 2 minutes, until the artichokes darken. Serve immediately, with dipping sauce if desired.
