Fried sweetbreads
Description
Children love fried fish milt just as much as they love fried caviar. Milt contains no bones, making it soft and delicious in texture. To achieve a golden crust on the milt, fry it in breadcrumbs made from finely ground wheat or corn flour.
Instructions
- 1
Step 1

Prepare the listed ingredients. Rinse the milks and remove the film from the vessels.
- 2
Step 2

Mix the salt with wheat flour and ground black pepper. Pour the mixture onto a plate and coat the fish fillets on all sides.
- 3
Step 3

Heat a skillet and pour vegetable oil into it. You can substitute it with butter or clarified butter. Place the fish milt in the skillet and cover the pan with a lid, as this product tends to "spit."

Step 4

Fry for about 2 minutes and turn to the other side when the bottom is covered with a golden crust. Fry for the same amount of time.

Step 5

Place the fried sweetbreads on a plate and serve with any side dish. It goes perfectly with potatoes, pasta, or a vegetable salad.
