
Fried Mussels

Step 1

1. Clean the mussels. Place them in a large bowl with very cold water and let them sit for 10 minutes. This will help remove the sand. Then take the mussels one by one and rinse them under running water. Discard any mussels with cracked or not fully closed shells. Heat the wine in a medium saucepan. Add the mussels and cook over high heat until they open. This takes approximately 3 to 6 minutes.

2. After opening the mussels, let them cool. Reserve the liquid for another use. Press the garlic through a garlic press. In a small bowl, mix butter, chopped parsley, garlic, smoked paprika, and salt to taste. Spoon the mixture into each mussel, place them on a tray, and refrigerate until the butter hardens.

3. Preheat the grill or oven to 260°C if you do not have a grill. Cook the mussels until the oil starts to bubble, about 2 minutes (or up to 4 minutes in the oven).

4. Serve the mussels immediately with slices of crispy bread or French fries.
