
Fried Zucchini with Garlic for Winter

Winter preserves made at home. I'll tell you more below. Jars keep for up to a year in a cool place.

Prepare all the ingredients.

Wash the zucchini thoroughly and slice into rounds 1–1.5 cm thick. I use both zucchini and courgettes.

Heat a skillet with vegetable oil and add the zucchini. Fry until golden brown on both sides.

Place the fried zucchini on paper towels to remove excess oil.

Press the garlic through a press. Chop the parsley coarsely.

Place a little parsley and garlic on the bottom of a clean sterilized jar.

Then begin packing the jar tightly with zucchini. Salt each layer and add a little parsley and garlic.

When the jar is completely full, pour in the vinegar. Cover the jar with the lid, but do not screw it on tight.

Line the bottom of a pot with a cloth or towel, place the jar on it, and pour in water up to the shoulders of the jar. Sterilize in boiling water for 25 minutes over moderate heat.

Seal the jar tightly with the lid, turn it upside down. Wrap it in a towel and leave it until completely cooled.
