
Fried hinkali
Description
The recipe won't take much time. Although not very common, you can still occasionally find this dish in Georgian restaurants, but we won't even need to go anywhere to try it—we'll make fried khinkali at home. We'll prepare both the dough and the filling following a traditional recipe, then simply boil the khinkali until fully cooked and pan-fry them in vegetable oil. Believe me, the result will be amazing—incredibly delicious and beautifully presented. The best part is that making fried khinkali at home is actually very easy, so let's get started right away. Pour water into a bowl, add the egg and a little salt, beat everything, then gradually start adding flour and kneading the dough until it becomes quite firm.

We pass the minced meat once again through the meat grinder together with onion and garlic, then add spices, salt, and warm water to make the filling juicier. Now, tear off small pieces of dough and roll them into flat rounds. Place a portion of the filling in the center of each round, bring the edges together, and tightly twist them to form pleats on top.

Pour water into a saucepan, add salt, and bring to a boil. Place the dumplings into the boiling water and cook until fully done, about 10 minutes after they float to the surface.

We fish out the boiled hinkali with a slotted spoon and place them onto a plate. Then we pour vegetable oil into a frying pan and heat it well. We put the hinkali into the hot oil and fry them on all sides until golden brown. Serve the fried hinkali with sour cream or tomato sauce. Enjoy your meal!
