
Fried Eggplants with Garlic
Description
Perfect for the table and for drinks. Fried eggplant with garlic is the simplest to prepare, yet a very interesting appetizer in terms of flavor. Anyone can make it—the recipe is very easy. It turns out a bit rich and spicy, thanks to the garlic. Just be careful if you still have to socialize with people that day—garlic has a way of making your breath very sharp and pungent :) Serve with herbs and sauce.

Step 1

Wash the eggplants and cut them into long lengthwise slices—that is, cut each whole eggplant along its length, not crosswise.

Chop the herbs finely and add crushed garlic to them.

Wash the eggplants once more thoroughly and pat dry with a towel. Before frying, the eggplants must be completely dry.

Fry the eggplants in vegetable oil on both sides. Fry for one to two minutes on each side.

Now for the main step—take the fried eggplants, place a little of the garlic-and-herb filling on the edge, and roll into a roll, as shown in the photo.

You should end up with these nice little rolls. Serve the fried eggplant with garlic cold, as an appetizer.
