
Fried artichokes with beans
Description
The dish is prepared without unnecessary complications. Fill a large bowl with ice and water, and set aside. In a medium pot, bring water to a boil. Add the beans and blanch for 30 seconds. Remove the beans from the water and place them into the bowl with ice water. Pour 4 cups of water into a large bowl, add lemon juice, and set aside. Remove the tough leaves from the artichokes and cut off 2 cm from the tip of each artichoke. Peel and brush with lemon juice, then place them into the lemon water. Heat olive oil in a pot over medium heat. Add garlic, salt, black and red pepper. Cook, stirring frequently, for about 2 minutes. Add the artichokes, 1 cup of the lemon water, thyme, parsley, and bring to a boil. Reduce heat to low, cover with a lid, and simmer until the artichokes become tender, about 14 minutes. Add the beans and continue cooking until the beans are soft, about 3 minutes. Serve the dish hot. The finished dish is ready to be served.
