1. To prepare fried pork in a pan, start by marinating the meat. First, wash the pork under cold running water and dry it. Then cut it into portion-sized pieces. Season with salt and pepper to taste, sprinkle with lemon juice, and optionally add a little honey. Let the pork marinate for 25–30 minutes. After that, pour olive oil (sunflower oil can be used as a substitute) into a frying pan and add a sprig of thyme. You can also add 1–2 cloves of garlic to taste.

2. When the oil has heated and absorbed the aromas, carefully remove the thyme and place it on a paper towel. Add the pork to the pan.

3. Over medium heat, cook the meat until a golden crust forms. You can cover it with a lid. Then flip and sear the other side. Once the meat is well cooked, remove it from the pan and set aside for a while. To keep it warm, wrap it in foil.

4. Add tomatoes to the hot oil. Cherry tomatoes work best.

5. Gently stir the tomatoes to keep them intact. Add balsamic vinegar and spices, if desired. Sauté in a pan for 5–7 minutes.

6. When the tomatoes are ready, it's time to remove the meat and prepare the dish for serving. You can also use the thyme sprig that was fried in the oil. And just like that, in the shortest time and with minimal effort, pork fried in a pan at home can turn into a restaurant-quality dish.
