Homemade pastries for tea. There are many recipes for making samsa. Today I would like to share a very tasty version of fried meat samsa made from puff pastry (gushtli qovurma varaqi somsa). Of course it is best to use homemade puff pastry, but if you have absolutely no time, it is certainly easier to buy ready-made. If you already have ready-made dough and minced meat on hand, preparation will take very little time. Fried puff pastry turns out incredibly tender and literally melts in your mouth; together with the juicy, aromatic filling the result is truly delicious—be sure to try making it, you will not regret it. The pastries are ready. Serve them at the table.

    Prepare all the ingredients. For the filling, beef or lamb works best, but if you prefer, you can use any meat you like.

    Pass the meat through a meat grinder and transfer it to a frying pan preheated with 1 tablespoon of vegetable oil.

    Stirring occasionally, cook the mince until the liquid has evaporated.

    Then add finely diced onion, salt, and spices to taste. Sauté until the onion is translucent, then remove from the heat and let cool.

    Roll each piece of dough into a rectangular sheet about 5 mm thick. Divide into 6 portions. Place the filling in the center, brush the dough around the filling with egg white, and shape the samsa in any convenient form.

    From two 250 g pieces of dough, I got 12 portions.

    Puff pastry samsa can be fried in deep oil at 180 degrees, or in a frying pan in a large amount of vegetable oil. First, fry one side under a lid until golden brown, then turn it over and fry the other side without the lid. The heat should be low so that the dough has time to cook through.

    Place the cooked samsa on a paper towel to blot off excess fat, then transfer to a plate and serve right away.
