Cut the fish into pieces for easier frying. Mix flour and salt. Coat the fish in the flour and place it on a plate. Put it in the freezer for 10 minutes so the flour sticks well to the fish.

Lightly beat the egg with water. Prepare bowls next to the stove on the right side (if you are right-handed). The one closest to the stove should contain breadcrumbs, then the egg, then the fish. This way you'll avoid drips and crumbs on the countertop.

Dip the fish in egg, then coat in breadcrumbs. Fry in hot olive oil. It's better to use a pan with high sides to avoid splattering. Cook until golden brown on both sides.
