
Fried liver with Provençal sauce

1. For this recipe, I used beef liver. First, let it thaw slightly, then remove the membrane. Next, it's advisable to soak the liver in milk to ensure it turns out tender when cooked. These are the two secrets I mentioned at the beginning.

2. Coat each piece in flour on both sides and place in the frying pan. Fry in vegetable oil on both sides.

3. When flipping to the second side, add salt. Don't do this earlier, otherwise the liver will become tough. This is another small secret.

4. Separately, fry the onion until golden brown.

5. Put the liver back, then add the fried onion on top. Now add a little water, cover with a lid, and simmer for about 10 minutes.

6. Now we need to prepare the sauce. It's not mandatory, but it allows the finished dish to fully reveal its aromatic qualities. So, we will need butter, onion, apple, and Provence herbs.

7. Grate the onion and apple on a fine grater until they turn into a puree.
