
Georgian-style fried liver
Description
This recipe won't take much time. Georgian cuisine is very generous with various spices and herbs. It is characterized by combinations of spicy and sweet, sour and spicy, rich and aromatic flavors. Even a product like liver, which has a distinct taste and smell, can be enriched with Georgian notes. You can use any kind of liver: chicken, beef, turkey, and others. 1. Wash the liver thoroughly and remove any membranes and blood clots. Pat dry slightly with paper towels and cut into medium-sized pieces. 2. Place a frying pan over heat and pour in vegetable oil. Put a small amount of flour into a bowl and mix it with salt and spices. Coat each piece of liver in the mixture and place onto the hot surface. Fry until fully cooked, stirring constantly. 3. Wash the tomatoes and dice them into small cubes. Slice the onion into half-rings, chop the garlic into small pieces, and finely chop the herbs (coriander and parsley). Transfer all the vegetables into a bowl, then add the fried liver. Cover with a lid and let stand for 15 minutes. Serve hot.
