
Roasted partridge
Description
The recipe won't take much time. Here is a simple way to prepare fried partridge. The birds should first be marinated in wine and vinegar (in a 10 to 1 ratio). This makes the meat much more tender and flavorful. You can cook it on a barbecue if you're outdoors, or at home on a grill. Good luck with your cooking! Serve hot.

Rinse the partridges and remove any remaining feathers. Make a cut along the belly to flatten the bird. Lightly pound with a mallet.

Salt and pepper the quails on all sides. Transfer to a deep plate and pour wine over them (and a little vinegar). Additionally, you can add your favorite dried spices. Let marinate for 1 hour.

After an hour, dry the partridges thoroughly from the marinade. Brush the birds with melted butter. Place the partridges on the grill (cut side down). Grill under pressure so the birds are tightly pressed against the grill.

Grouse are fried for 7-8 minutes on each side.

Serve the finished dish with herbs and minced garlic.
