Fried chicken with spinach

Description

Season the chicken with salt and pepper. Heat oil in a large skillet over medium heat. Cook the chicken until browned, 8 to 10 minutes. Add 1/4 cup of water, reduce heat to low, cover with a lid, and simmer for 4 to 6 minutes. Remove from the skillet. Prepare the mustard sauce: add onion puree to the skillet and cook over medium heat, stirring, until softened, about 3 minutes. Add mustard and vinegar, cook for 1 minute. Remove from heat. Add oil and stir to combine. In a bowl, toss spinach with half of the mustard sauce. Spread the remaining sauce over the chicken and serve with the spinach.
