
Fried chicken with mustard sauce
Description
The dish is prepared without unnecessary complications. The spicy mustard sauce gives the chicken meat a piquant flavor. You can preheat it over high heat for a few minutes. The finished dish can be served at the table.

1. Finely chop the shallot. Preheat the oven to 230 degrees with the rack in the center. Season the chicken on both sides with salt and ground black pepper. Heat the oil in a large cast-iron skillet.

2. Sear the chicken in 2 batches until golden brown, turning once, for about 5 minutes per batch. Place all the chicken back into the skillet, skin side up, and bake in the oven for approximately 15–20 minutes. Transfer the chicken to a serving dish.

3. Then add the chopped shallot, dry white wine, and chicken broth to the skillet where the chicken was roasted, scraping off the browned bits from all sides. Cook until the liquid is reduced by half, about 2 to 3 minutes. Add the cream and cook until the sauce thickens, about 1 minute. To make the sauce thicker, increase the heat and continue cooking until it reaches the desired consistency.

4. Strain the sauce through a sieve into a bowl. Add mustard, chopped green onions, salt, and pepper to taste. Mix well. Serve the prepared chicken with the sauce.
