Description

The advantage of this cooking method is that none of the flavor nuances are lost, since all ingredients are cooked in the same skillet, allowing the buckwheat to absorb the aromas of all the other ingredients and become tastier. 1. Sauté chopped onion, pepper, celery, and carrots in vegetable oil, then add tomato paste and reduce the heat slightly.

2. When the vegetables become soft, add the mushrooms and slightly increase the heat so they brown a bit. Add spices to taste.

3. Now add the buckwheat, mix well and sauté until a characteristic nutty aroma fills the kitchen. Pour two glasses of boiling water over the buckwheat, reduce the heat, and simmer covered for 10–15 minutes.
