
Italian tomato sauce for winter storage

Prepare all the ingredients.

Make a crosswise incision on the tomatoes, pour boiling water over them, let sit for 5 minutes, then rinse with ice water. Peel the tomatoes, remove the seeds, and slice them for convenience.

Blend the tomatoes into a puree. Place the tomato puree over low heat and bring to a boil.

Finely chop the onion and sauté in a frying pan until soft. Do not brown the onion! When the onion is almost ready, add the minced garlic and cook together for 1-2 minutes.

Add the onion and garlic to the tomato puree. Cook for half an hour, stirring occasionally.

Then add all the spices, finely chopped herbs, sugar, and salt. Simmer the tomato sauce for about another half hour until the consistency resembles thick sour cream.

Remove the bay leaf, pour in the vinegar, bring to a boil, and take the sauce off the heat.

Pour the sauce into pre-sterilized jars, seal with lids, and let cool. Then store the sauce in a cool place.
