
Italian sauce
Description
Minimal ingredients — excellent result. Pesto sauce originates from Liguria in northern Italy; it has a rich flavor and emerald color. In Sicily, sun-dried tomatoes and almonds are added to pesto. The finished sauce can be stored in the refrigerator for several days.

Prepare all the ingredients. Gently wash the basil and dry thoroughly.

Separate the basil leaves from the stems and transfer them to the immersion blender cup. Also add the upper soft part of the stems; the lower fibrous part can be discarded.

Cut the Parmesan into small pieces and add to the basil.

Add pine nuts. To make the sauce more aromatic, lightly toast the nuts in a dry skillet. Pour in the extra virgin olive oil, add a garlic clove and a pinch of salt.

Blend everything with a blender until smooth.

Place the prepared sauce into small jars and refrigerate until cooled. Serve with meat and fish dishes, or use "Pesto" to prepare salads and appetizers.
