
Italian cheese pie
Description
To make an Italian cheese pie, we'll need three small jars of mascarpone and one jar of ricotta, as well as cracker crumbs, like those used for cheesecake. See the recipe below. Serve cooled or slightly warm.

Crush the cracker crumbs, mix with sugar and softened butter. Press the resulting mixture into a baking pan.

Using a mixer, combine mascarpone with sugar.

Add a pinch of salt, ricotta, and vanilla seeds.

Add the eggs one at a time, mixing the mixture thoroughly.

Pour the mixture evenly into the pan over the cracker base.

Place the pie in a preheated oven at 170–180 degrees Celsius. Put a bowl of water on the rack below to absorb some of the heat. Bake for about an hour, until the entire cheese mixture has set and solidified. Then slightly open the oven door and let the pie cool down slowly. After that, it's ready to be served.

You can whip the sour cream with sugar and spread the mixture over the top of the cake. Store in the refrigerator before serving.
