
Italian doughnuts
Description
Homemade baked goods to go with tea. For doughnuts, full-fat, non-sour cottage cheese works best. It does not have to be dry or paste-like. The amounts given make a small portion, so if you have a large family, scale up the ingredients. Remember that flour differs from place to place—you may need slightly more or less. Serve with tea or coffee.

Prepare the necessary ingredients.

In a bowl, combine cottage cheese, eggs, sugar, zest, and the juice of half a lemon. Mix with a fork.

Pour in most of the flour and begin mixing with a fork.

When the dough starts to come together in clumps, add the remaining flour and knead by hand.

Roll the finished dough into a ball. It should be soft and stick slightly to your hands. Lightly dust the work surface with flour. Shape the dough into a log and cut off a small piece of dough.

From the cut-off piece, roll a long rope. You should get two donuts out of it. Form a loop on one side. Cut off from the rope. Press the spot where the ends meet with your finger.

Do the same with the remaining dough. Transfer the pieces to a board dusted with flour.

In a Dutch oven or tall saucepan, heat vegetable oil. Fry the doughnuts until cooked through, turning once so both sides brown.

Sprinkle 3 tbsp of sugar onto a plate. Roll the finished, hot doughnuts in the sugar.

Transfer the baked goods to a small serving dish and serve at the table.

Remove from the oven and serve warm or cooled.
