Description

The dish is prepared without unnecessary complications. The main feature of tortellini—Italian dumplings—is the dough and the shape. The dough is made from flour and egg yolks. It turns out quite stiff, which makes it difficult to roll out by hand, but the result is incredible: thin and very tasty pasta. For the filling, you can use meat, but mushroom with cheese is a more original and festive option. Tortellini are shaped like little buds or roses. The finished dish can be served at the table.

    First, prepare the dough: add 10 egg yolks to the flour and knead the dough. This is a labor-intensive process, and of course, it will go much faster with a special food processor. If the dough crumbles into small pieces, add another egg yolk. The result should be a firm dough, which you should wrap in plastic wrap and refrigerate. While it chills, you can prepare the filling.

    The filling will be cheese and mushroom. For the cheese, you can use ricotta or mascarpone, or even small-curd cottage cheese. But don't use processed cheese, it's not suitable. The mushrooms are button mushrooms.

    Chop the onion, garlic, mint, and mushrooms.

    Put everything in the blender bowl. Blend until smooth and paste-like. Add a couple of tablespoons of olive oil.

    The resulting paste should be fried in a pan for another 5 minutes without oil.

    Meanwhile, grate the zest of one lemon into the cheese.

    Let the mushroom paste cool, then mix it with the cheese.

    Mix the filling and put it in the refrigerator for half an hour so it's easier to shape the dumplings later.

    While the filling is cooling, take out and prepare the dough. Ideally, use a pasta machine, as the dough needs to be rolled out to a thickness of 2-3 mm.

    You can roll out the dough by hand, but be prepared for it to be somewhat difficult and time-consuming. Then cut out circles from the dough, place the filling in the center of each, and lightly brush the edges of the circles with beaten egg.

    Now we start shaping the dumplings: fold the dough in half and seal the edges.

    Boil the dumplings in mushroom broth or just salted water for about 5 minutes, until cooked.
