
Italian potato gnocchi
Description

The amount of flour needed depends on the type of potato; the dough should be firm enough to handle easily. Don't hesitate to make a larger batch right away—gnocchi freeze wonderfully. 1. Wash the potatoes, dry them, and place them on a baking sheet. Put in a preheated oven at 200 degrees and bake until soft (a fork should easily pierce them).

2. After cooling, cut in half and carefully remove the pulp with a spoon.

3. Add salt and pour in part of the flour. Mix.

4. Transfer everything to the work surface and start kneading the dough, adding flour as needed.
