1. Shape the dough into small balls, place them on a baking sheet, cover with a towel, and let rise in a warm place for half an hour until they increase in size.

2. In a separate container, mix the grated mozzarella, Parmesan, ricotta, 2 eggs, salt, and pepper.

3. Sauté the onion and sausage over medium heat until browned. Season with Italian spices and red pepper.

4. Roll the dough ball into a thin sheet. Place the cheese filling in the center of the dough, then put the sausage on top.
