
Italian bread sticks
Description
Delicious baked treats for the whole family. Italian breadsticks "Grissini," made with sourdough starter, turn out just as good as the classic version. These breadsticks can be served as bread alongside soups, main dishes, sauces, or simply as a snack. You can shape thinner sticks by cutting the dough into narrow strips and stretching them well. For filling, I recommend using not only white but also black sesame seeds, cumin, and sunflower seeds—they taste delicious. Serve warm or cooled. Perfect with tea.

1. Prepare the starter: mix the water with the starter culture, stir well. Add the sifted flour and mix again thoroughly. Cover with plastic wrap and let sit at room temperature for 8 hours.

2. Place the starter, water, olive oil, sugar, salt, sifted flour, and semolina into the bowl of a dough mixer. Add turmeric and cumin, and knead the dough for 5 minutes at speed 2.

3. Place the dough in a bowl greased with vegetable oil, gather the edges toward the center, smooth the surface, and cover with plastic wrap. Let it sit at room temperature for 3 hours.

4. Place the dough on a work surface, shape it into a round and let it rest under plastic wrap for 10 minutes. Roll it out into a 1 cm thick sheet. Visually divide the dough into three strips. Evenly spread sesame seeds in the center and cover with the second part of the dough.

5. On top, also sprinkle sesame seeds and cover with the third portion of the dough. Gently press down the strip and cut the dough into 20-30 strips (depending on the desired thickness of the sticks). Roll each strip into a long, thin stick and slightly stretch it.

6. Place the prepared pieces on a parchment-lined baking sheet, cover with plastic wrap, and let rest for 1 hour. Bake the sticks in a preheated oven at 220 degrees for 15-20 minutes.
