
Italian Chebureki

Prepare the ingredients.

Pour the flour, salt, and yeast into a bowl for mixing the dough, and combine.

Make a well in the flour and pour in the water.

Knead the dough, work it for about 5 minutes, form it into a ball, cover with plastic wrap, and leave it for 1 hour to ferment.

Divide the dough into 6 equal parts, shape each part into a ball, cover with plastic wrap, and leave to ferment for another 30 minutes.

While the dough is rising, prepare the filling: chop the basil and finely dice the sausage.

Cut or tear the mozzarella by hand into small pieces.

Grate the soft cheese, add chopped basil to it, and mix.

Roll out the dough into a thin sheet, and spread soft cheese with herbs as the first layer.

Place the tomatoes on top of the soft cheese.

Place pieces of mozzarella on top.

Seal the edges of the pie well, as complete airtightness is needed during frying.

Place the pie in a well-heated frying pan with enough oil. Reduce the heat and fry, basting with oil. Carefully flip it to the other side and fry on the other side.
