Description
Homemade treats for tea. Delicious almond cookies traditionally served with a glass of wine in Italy, but I often serve them with morning coffee or sweet tea. These cookies remind me of vanilla rusks with raisins, but they are softer, with a pronounced almond-vanilla aroma.

Toast the almonds slightly in a pan, then chop into large pieces.

Sift the flour into a bowl, add almond, granulated sugar, baking powder, and salt, then mix.

Separate one egg into white and yolk, place the yolk into a bowl, and crack the remaining eggs into it.

Add vanilla extract and a spoonful of cold water to the eggs, then mix.

Pour the liquid ingredients into the dry ones, add the raisins and knead the dough, then divide it into 3 parts.

Form a sausage about 3-4 centimeters thick from each piece, transfer them to a baking sheet and brush with egg white.

Bake in a preheated oven at 180 degrees for half an hour, then remove and transfer to a cutting board, wait 10 minutes.

Using a sharp knife, slice the sausages diagonally into pieces about 1 centimeter thick, return them to the baking sheet, and bake in the oven for another 15 minutes.

The cookies should be crisp and crumbly; transfer them to a wire rack to cool, then place them in a container or bowl, but cover with a towel.
