1. Add egg whites to a bowl, sprinkle in sugar, and pour in 3 tablespoons of water.

2. Prepare a double boiler: pour water into a saucepan and bring it to a boil. Place a bowl over the saucepan so that its bottom does not touch the water. Beat on low speed for about 4–5 minutes, then increase the speed and beat for another 4 minutes. Remove the bowl from the saucepan and increase the speed to maximum, beating for 5 minutes (during this time the mixture will cool down).
