
Spanish Cheesecake
Description
Perfect with tea and coffee. If you haven’t made this cheesecake yet, I strongly recommend you do. Try it once and you’ll make it all the time! Delicious, tender, and fragrant

Step 1

Gather all the ingredients you need to make the “San Sebastian” cheesecake. Use plain cream cheese with no additives. For the dessert you will need heavy cream—at least 25% fat, preferably 33% or higher. Adjust the amount of sugar to your taste; with my proportions the cheesecake turns out moderately sweet and not cloying.

In a mixing bowl, put the cheese, add the sugar and vanilla. Mix thoroughly with a whisk or a mixer on low speed.

Beat in the eggs one at a time, thoroughly mixing the mixture after each egg is added.

Pour in the cream and stir.

Add the cornstarch and mix thoroughly until smooth and lump-free. The cheesecake batter will be quite liquid; that is how it should be, so do not let that alarm you.

Line a 16 cm springform pan or pastry ring with good-quality silicone-coated parchment paper. If you are not sure about your paper, brush it lightly with odorless vegetable oil. If you use a ring without a bottom, wrap it in several layers of heavy-duty foil. Pour the cheesecake batter into the prepared pan and bake in a well preheated oven at 190°C for 25 minutes, then increase the temperature to 230°C and bake for another 10–15 minutes.

Take the finished cheesecake out; the top should be browned, almost burnt-looking — that is normal and how it should be. During baking the cheesecake will rise quite a bit, but as it cools it will settle. Without removing it from the pan, let it cool at room temperature, then (still in the pan) transfer it to the refrigerator for 5–6 hours to fully set.

Remove the chilled cheesecake from the pan and transfer it to a plate. Garnish as desired with berries, confectioners’ sugar, or melted chocolate.

Cut into pieces and serve. It’s very tasty!
