
Spanish croquettes

Actually, croquettes are originally a French dish, but they turned out so delicious that the Spanish neighbors quickly took note of this recipe. Spanish croquettes are a great side dish when you're tired of porridge, pasta, and potatoes. The classic recipe usually features potatoes, but today I'm sharing a different recipe.

Step 1

Peel 1 onion and 1 carrot, cut into large pieces. Boil the chicken breast together with the vegetables and herbs.

Clean the mushrooms and onions, chop finely.

Sauté mushrooms and onions in a pan for 5–7 minutes. Add flour and butter, and cook until golden brown.

When everything is fried, gradually pour in the milk, constantly stirring. Then add a couple more ladles of broth left over from boiling the chicken.

Shred the chicken into very thin fibers.

Add the chicken to the sauce and let it cool, then refrigerate overnight.

Cut the cheese into large strips.

Form the croquettes. Place the chicken mince on a moist palm, shape it into a patty, and put a piece of cheese in the center.

Form an oval croquette and roll it in flour. Repeat with all the croquettes.

Then dip each piece into beaten egg and coat with breadcrumbs.

Fry the croquettes in a pan with vegetable oil on each side until golden brown, about 1 minute per side. Done!
