
Spanish tortilla
Description
The dish is prepared without unnecessary complications. Spanish tortilla is a slow-cooked omelet filled with potatoes. You can add any filling to the tortilla according to your preference. The finished dish can be served at the table.

Step 1

1. Peel the potatoes, rinse them, and slice into very thin rounds. If you have a food processor or a grater with a mandoline attachment, now is the perfect time to use it.

2. Peel the onion and slice it thinly into half-rings. Add the sliced onion to the potatoes, along with 3-4 tablespoons of olive oil, salt, and black pepper. Mix thoroughly.

3. Heat a couple of tablespoons of olive oil in a skillet and add the potatoes and onions. Reduce the heat to medium and cover the skillet with a lid. Fry the potatoes under the lid, stirring occasionally, for 15 minutes.

4. In the same bowl you used for the potatoes, beat the eggs (with a whisk or fork), add salt, pepper, bell pepper sliced into thin half-rings, peas, and the prepared fried potatoes with onions. Mix everything together with a spatula.

5. Heat a spoonful of oil in a skillet and turn the stove to high heat. Place the mixture of potatoes, onions, and eggs into the skillet. During the first minute of frying, stir the mixture with a spatula, then try to level it out. Use the spatula to separate the edges of the tortilla from the skillet.

6. Reduce the heat to medium-low, cover the skillet with a lid, and cook the tortilla covered for 2-3 minutes. Then remove the lid and place a large plate over it instead.

7. Invert the skillet, holding the plate with your hand or placing it on the table. The tortilla will end up on the plate.

8. Add another spoonful of oil to the skillet and place the tortilla in the pan. Fry the tortilla on the other side. Cover with a lid and cook for another one to two minutes.
