Spanish paella with seafood

Description

The dish is prepared without unnecessary complications. The classic paella recipe calls for only seafood, but vegetables and chicken fillet are increasingly being added. Saffron is an essential ingredient, giving the dish a pleasant yellow color. You can use any seafood for paella. The dish should be served hot or warm. The finished dish is ready to be served.

    1. Peel the garlic and crush it with a knife, then chop it into small pieces. Wash the bell pepper, cut it in half, remove the seeds, and cut into large pieces. Peel the onion and slice it thinly. Wash the parsley, finely chop the stems, and set aside the curly leaves.

    2. I wash the tomato and cut it in half, then grate each half on a coarse grater to make tomato paste. I put a small pinch of saffron into a bowl and pour a small amount of boiling water over it.

    3. I choose two large shrimp and rinse them under running water, leaving the shell on, and remove the vein.

    4. Place a special paella pan over heat, pour in olive oil, and add freshly peeled shrimp, mussels, and squid. Sauté everything for no more than 2-3 minutes.

    5. Add the previously peeled shallot and bell pepper to the pan, mix and cook for another 2 minutes, then add parsley stems and chopped garlic, remove the mussels.

    6. Pour in the soaked saffron, add the tomato, pour in the shrimp broth, season with salt and pepper to taste. After boiling, add the rice, stir, and cook for 15 minutes. Add the remaining shrimp and cook for another 10 minutes.

    7. Serve the ready paella directly in the pan, garnish with mussels, lemon, and chopped parsley leaves.
