
Spanish paella
Description
The most popular version is seafood paella. You can add any seafood mix. My cooking method is very simple and accessible. A little bit of everything: shrimp among seafood, and chicken and sausage among meats.

In a bowl, combine saffron with a tablespoon of boiling water.

Wash the chicken thighs, remove the skin, cut the meat off the bone, and cut into small pieces.

Heat a pan with vegetable oil and add the chicken; fry for 5–10 minutes, then transfer to another plate.

Return the skillet to the heat and add the chorizo, chopped onion, and garlic. Stir and cook until the onion becomes translucent.

Wash and chop the tomatoes, add them to the pan and cook until soft.

Rinse the rice in several changes of water and place it in a frying pan. Add saffron with water and salt. Bring to a boil, then reduce the heat, add the chicken, and cook uncovered for about 20 minutes.

After twenty minutes, add the shrimp and frozen green peas, cover with a lid, and cook for another 15 minutes.

Before serving, garnish the dish with lemon slices or drizzle with lemon juice. Serve the paella directly in the pan.
