Description

The dish is prepared without unnecessary complications. Finely chopped vegetables, mixed with pieces of salted cod and cream, then baked in small casseroles covered with a lid of puff pastry. The finished dish can be served at the table.

    The day before, rinse the salted cod under cold water to remove excess salt. Then place it in a bowl filled with cold water and soak overnight.

    Take the fish out of the water and place it in a pot. Cover with cold water and simply simmer over low heat. The water should not boil, otherwise the cod will become rubbery. Ideally, cook for 10 minutes.

    Once the cod becomes opaque, remove it. Let it cool, then flake into small pieces, removing the skin and bones.

    Cut out circles from the puff pastry, 2 cm wider in diameter than your soup tureens. Brush with beaten egg yolk, optionally create patterns on top, then refrigerate for now.

    Peel, wash, and cut the vegetables into small pieces of uniform size. Cut the turnip into small triangles.

    Cut leek into slices. Cut green beans into short lengths.

    Carrots into small triangles. Green peas only need to be shelled, as they will be added raw.

    Bring water to a boil and add salt. Dip the turnip into the boiling water until it is almost cooked, still slightly crisp. Then remove and immediately place into cold water. Dry on a towel. Do the same with all the vegetables (except green peas).

    Clean the mushrooms and cut into small pieces. Melt a little butter in a skillet and add the mushrooms. Fry for 2–3 minutes over high heat. When cooked, add the juice of ½ lemon, salt, and pepper.

    After all the vegetables are prepared and dried, place a piece of butter in a frying pan, melt it, and add the chopped shallot. Fry for one minute, add salt, pepper, and all the vegetables, mix well, then add the cod. Do not cook further—just combine the ingredients.

    Preheat the oven to 240°C. Fill soup bowls ¾ full with the mixture of vegetables and fish.

    Pour 2 tablespoons of cream into each. Add a pinch of salt and pepper.

    Wet the edges of the soup bowls with water. Place circles of puff pastry on top. Slightly stretch and secure.

    Do the same with all of them and place on a baking sheet.

    You can use glass jars, for example, the kind used for jam.

    Place in the oven until the dough turns golden brown.
