
Ischler pastry (Ischler Törtchen)
Description
In the 1950s, Richard Kurt, head pastry chef at "Zauner" in the lovely town of Bad Ischl, created these pastries. Since then, they have become popular throughout Austria, especially at Christmas. Prepare the necessary ingredients for the dough.

Beat the butter, sugar, and vanilla until light and fluffy. Add the ground almonds and flour, then knead into a smooth dough. Wrap the dough in plastic wrap or foil and refrigerate for 1 hour.

Roll out the dough to a thickness of 3-4 mm. Cut out circles 5-8 cm in diameter. Place the prepared rounds onto a baking sheet lined with parchment paper or a silicone baking mat.

Place in a preheated oven at 180 degrees for 12 minutes.

Prepare the ingredients for the filling and glaze. Break the chocolate into pieces, place in a double-boiler, add the cream. Melt over low heat until smooth, then remove from heat.

Place 1 teaspoon of jam on one cookie round and top with a second cookie round.

Cover the top layer of the cake with icing and sprinkle with chopped nuts (ideally pistachios).
